Zucchini and Olives in Olive Oil Stir-fry
Zucchini is one of the vegetables that I was not a fan of as a child but now love as an adult. Zucchini are not failed cucumbers. They go well with tomatoes, onions, and mushrooms, and of course make a good topping for spaghetti. Not every stir-fry has to be Asian or Asian-inspired, either. Here the zucchini has been cooked into a side dish.
First, chop up the onions.
Start stewing the onions with oregano, thyme, basil, black pepper, olive oil, cooking wine, and dried chopped parsley. I add some water for this. Feel free to add a bay leaf or two.
If you are going to add mushrooms, now would be a good time to do it. Chop up the olives and add them to the onions.
Slice the zucchini. If you are going to pack this dish into a lunchbox, you might one to halve the slices. Add the zucchini to the skillet.
And this is what you get. It's not department store deli fare, but it looks and tastes like a wholesome home-cooked dish.
☆The Next Day☆
The leftovers go well with spaghetti for a quick, easy dinner.
Please, try not to notice the plate's surroundings. Don't even think about them.
Bamboo Shoots Lightly Stewed with Green Peas
If you're looking to add roughage to your diet without too much effort, bamboo shoots are effective. If you use the vacuum packed ones, all you have to do is wash and cut them, as the husks have been dealt with already. It's hard to find a vegetable that's more hassle-free than this. Green peas are frozen vegetables. Whether you live alone or have a family to cook for, you're probably seeking to minimize cooking time and tedious tasks.
For flavoring all you need is dashi (fish or mushroom stock), cooking sake, and a little soy sauce.
Start by cutting up the bamboo shoots.
You probably saw that coming.
It gets easier to wash the white gunk out once you've cut the bamboo shoots down to a manageable size.
Chop!
Once you're done chopping, start stewing the bamboo shoots with the seasonings.
When you're reasonably confident that the flavors have seeped into the bamboo shoots, add the peas. If you are using frozen peas, you won't need to add more water, because the ice that makes the peas stick together will melt.
All done! It's not drippy, so it stays tidy in a lunchbox.
Hand-knit Blankets
It takes at least two years to knit a blanket. I only know how to knit square scrubbers, so I knit a ton of those, and join them together.
I knit blankets for both of my parents.
Colorful ones.
Here is a closeup of the stitch. It's pretty dense, so the blanket is warm.
This one has slub and mohair mixed in.
I even knitted in the character for "long life." As you can see, this involved some meticulous patchwork.
I don't have the kind of free time I had as a teenager anymore, so it would take far more than two years, but I still knit sometimes.
