Bamboo Shoots Lightly Stewed with Green Peas
If you're looking to add roughage to your diet without too much effort, bamboo shoots are effective. If you use the vacuum packed ones, all you have to do is wash and cut them, as the husks have been dealt with already. It's hard to find a vegetable that's more hassle-free than this. Green peas are frozen vegetables. Whether you live alone or have a family to cook for, you're probably seeking to minimize cooking time and tedious tasks.
For flavoring all you need is dashi (fish or mushroom stock), cooking sake, and a little soy sauce.
Start by cutting up the bamboo shoots.
You probably saw that coming.
It gets easier to wash the white gunk out once you've cut the bamboo shoots down to a manageable size.
Chop!
Once you're done chopping, start stewing the bamboo shoots with the seasonings.
When you're reasonably confident that the flavors have seeped into the bamboo shoots, add the peas. If you are using frozen peas, you won't need to add more water, because the ice that makes the peas stick together will melt.
All done! It's not drippy, so it stays tidy in a lunchbox.
